Privacy, in plain English
We are a family restaurant on the Pueblo Riverwalk. This page explains what the website measures, what it stores in your browser, and how to ask us to delete anything we hold about you.
What we measure
The site uses a small, privacy-friendly analytics tool supplied by our hosting platform (a self-hosted Umami instance at manus-analytics.com). It is cookieless: it does not use cookies, it does not fingerprint you, and it does not build an advertising profile. It tells us how many people visited a page and which links were used — for example how many people tapped an order, reservation, phone, directions or ticket link. Those counts are anonymous and are never matched to a name.
What is stored in your browser
Two small flags stay on your own device and are never sent to us: your confirmation that you are 21 or older, kept so the age check does not repeat on every page, and a note that you have already seen a promotion, kept only for the current browsing session. The site sets no advertising or tracking cookies.
What you send us on purpose
If you use a catering, employment, fundraiser, private-events or Lounge inquiry form, the message is relayed to us by email so we can answer you. We keep it only as long as we need it to reply and to run the booking. When you order or book through Toast, buy class tickets through Square, or follow a link to Facebook, Instagram or Google Maps, you are on their site and their privacy policy applies.
What we never do
We do not sell your data. We do not rent it, trade it, or share it with advertisers. We do not run advertising pixels on this site.
Hosting and server logs
The site is hosted by Manus. Like any web host, the platform may keep standard operational records such as the time of a request and the address it came from, for security and reliability. Those records are not used to identify visitors.
Children
This is a bar and restaurant website intended for adults. We do not knowingly collect information from children.
Asking us to delete something
Email 1129spirits.eatery@gmail.com or call (719) 400-1129 and tell us what to remove. We will confirm once it is done.
Changes to this page
If what the site does changes, this page changes with it. Last updated: November 3, 2026.
